Will normal fitted sheets fit on this mattress?

Yes, most modern fitted sheets will be fine. It is worth checking, however, as this mattress is approx 36cm deep.

Will this mattress settle and dip more than a non pillow top mattress would do?

Not necessarily. The mattress is guaranteed for 5 years, so any defect or settlement outside of tolerance would see the mattress be replaced. There will always be some settlement with any mattress, and it can be slightly more so with a pillow top mattress.
